Pouch pH moisture and water activity

Pouch pH moisture and water activity

Define pH, moisture and water activity methods for a caffeine pouch project. Review their relationship with sensory targets, packaging and stability.

Product and process concepts

Caffeine pouch pH testing

Specify how the sample is prepared: whole pouch or extracted fill, liquid-to-sample ratio, water quality, contact time and temperature. A pH result from one method should not be compared to another as if the conditions were identical.

Moisture is not water activity

Moisture content measures water quantity under the chosen method. Caffeine pouch water activity concerns available water under the measurement conditions. Both can matter, but one cannot be substituted for the other without a justified relationship.

Connect measurements to observations

ObservationPossible checks to plan
Caking or poor flowMoisture uptake, raw-material properties and pack barrier
Sensory driftFormula version, pH method, moisture and storage
Seal problemsBag material, process settings, fill contamination and integrity
Storage changeDefined conditions, intervals and relevant product endpoints

Avoid a universal target

The appropriate limits depend on the actual formulation, contact materials, microbial considerations and intended market. This guide does not prescribe a single pH or water activity for all pouches. Define the basis and review it with the responsible technical team.

Project questions

What should I send for this review?

Send the target market, formula and pack version, the question you need answered and existing documents. Identify which values are proposed and which have already been approved.

Does this guide define an approved product specification?

No. Use the guide to prepare a project-specific review. Methods, acceptance criteria and responsibilities are agreed for the actual formulation, pack and market.
